1st Course Fire roasted corn, cashew and sunflower seed hominy fall salad tossed with a chipotel honey glaze, served on endive criso.

2nd Course Fig and candied bacon on baby frisee with black garlic dressing.

3rd Course Crema de calabaza soup poured table side with fired leeks and chives

4th Course Roast prokloin served with a pozole and grilled sweet potato mash, baby roast carrots, parsnips and pearl onions with a guajillo manzana sauce ** vegetarian option; Roast caulifower

5th Course Panacotta guava cake with vanilla ice cream quenelle. Garnished with powdered almond, matcha and charcoal.
