Amuse – Wild mushroom veloute, cave aged gruyere, black walnut oil, pumpkin seed
Salmon: Cured, Smoked, beetroot cured lox, smoked roe, yucca arepas, creme fraiche, finger lime, grano onion ash and chive bud
Egg: Panned, Gelled, “Scotch” quail egg, whiskey yolk gel, crispy chicken skin, cholula gel, pea tendrils and pickled beet
